Soften the cream cheese: leave the 8 oz cream cheese at room temperature for 20–30 minutes until very soft, or microwave on low power in 10–15 second bursts until spreadable.

Prepare crab: finely chop the imitation or real crab meat into small pieces roughly the size of a grain of rice to small pea. Drain any excess liquid if using real crab.

Combine filling: In a medium bowl, mash the softened cream cheese with a fork until smooth. Stir in the chopped crab, sliced green onions, 1 tsp soy sauce, 1 tsp sesame oil, 1/2 tsp Worcestershire sauce, 1 tsp minced garlic, 1/2 tsp sugar, 1/4 tsp white pepper, and 1/4 tsp salt until thoroughly combined and homogenous. Taste and adjust seasoning slightly if desired.

Chill the filling: cover the bowl and refrigerate for 15–20 minutes to firm slightly; this makes portioning easier and prevents wrappers from tearing while folding.
Wontons & Assembly

Prep work area: place a damp towel over your work surface to keep wrappers from drying. Arrange wonton wrappers in a single layer, keep unused wrappers covered.

Make sealing water: keep 1/4 cup cold water in a small bowl for sealing edges.

Portion filling: using a scant teaspoon or a small melon baller, place about 1 teaspoon (approximately 8–10 g) of the chilled filling in the center of each wonton wrapper. Do not overfill; too much filling will prevent proper sealing.

Fold into triangles (method 1): Moisten two adjacent edges of the wrapper with a dab of water. Fold wrapper in half diagonally to form a triangle, press edges to seal tightly ensuring no air pockets remain around the filling. Optionally press out any excess air and redistribute filling so center is slightly flattened.

Form the classic Crab Rangoon shape (optional): With the triangle point facing you, bring the two outer points of the long side up toward the center and overlap slightly, sealing with a little water so the three corners meet on the top to create a small pouch. Alternatively, leave as triangles or pleat the edges into a small purse—any sealed shape is fine.

Heat the oil: Pour about 1–2 cups neutral oil into a heavy-bottomed skillet or saucepan to a depth of about 1–1.5 inches. Heat over medium-high until the oil reaches 350°F (175°C). If you don’t have a thermometer, test with a small piece of wrapper: it should sizzle and brown in 30–45 seconds.

Fry in batches: Fry 4–6 wontons at a time without overcrowding—maintain oil temperature between 325–350°F. Cook each batch for 1.5–3 minutes, turning once with a slotted spoon or tongs, until golden brown and crisp on all sides.

Drain: Remove with a slotted spoon and transfer to a wire rack set over a baking sheet or paper towels to drain excess oil. Let sit 1–2 minutes to crisp further.

Keep warm: Place finished wontons in a 200°F (95°C) oven on a rack if frying in multiple batches to keep them crisp and warm while you finish the rest.
Dipping Sauce (optional)

Prepare sauce: Combine 1/2 cup sweet chili sauce with 1 tsp soy sauce if desired; stir to combine. Taste and adjust (add more soy sauce for saltiness or a squeeze of lime for brightness). Serve in a small bowl alongside hot Crab Rangoon.
