Peanut-Avocado Spread

Prep the avocado
Cut the avocado in half, remove the pit, and scoop the flesh into a medium mixing bowl. Use a fork to mash roughly if you want texture, or proceed to blend for a smoother result.

Combine base ingredients
Add the creamy peanut butter, Greek yogurt, and fresh lime juice to the mashed avocado. Stir with a spoon or use a whisk to start combining until mostly blended.

Season and emulsify
Add the honey (or maple syrup), olive oil, garlic powder, smoked paprika, kosher salt, and black pepper. Continue mixing until the spread is homogeneous. If you prefer a very smooth spread, transfer the mixture to a small food processor or blender and pulse 4–6 times until desired consistency is reached.

Adjust texture and taste
Taste and adjust: add up to 1 tsp more lime juice for brightness, more salt to taste, or a splash of water (1–2 tsp) to thin if too thick. If you want it spicier, stir in red pepper flakes or an extra 1/4 tsp of smoked paprika.

Fold in the chopped cilantro and most of the crushed roasted peanuts, reserving a couple tablespoons of peanuts for garnish. Stir gently so you retain some texture from the peanuts and cilantro.

Transfer the spread to a serving bowl. Drizzle a small amount of olive oil on top, sprinkle the reserved crushed peanuts and a pinch of smoked paprika or red pepper flakes for color and kick. Serve with lime wedges on the side.
