Method
Cocktail Base (makes 4 canned cocktails)
- 1
Measure and Combine Spirits
In a large pitcher or mixing container, pour 8 oz light rum, 4 oz gin, 4 oz vodka and 2 oz triple sec. Stir gently to combine.
- 2
Add Fresh Lime and Sweetener
Add 6 tablespoons fresh lime juice and 4 tablespoons simple syrup to the spirit mixture. Stir until fully incorporated. Taste and adjust: if too tart, add 1 tablespoon more simple syrup; if too sweet, add 1 tablespoon more lime juice.
- 3
Chill the Base
Cover and chill the combined cocktail base in the refrigerator for 30 minutes to an hour to let flavors marry and ensure the mix is cold before carbonation or canning.
Mix & Carbonation
- 4
Prepare Carbonation
Keep 24 oz of club soda or sparkling water very cold. If using a keg/siphon for pressurized canning, chill the cocktail base and soda; set up equipment per manufacturer instructions and sanitize fittings.
- 5
Combine Base and Soda (for still-style or lightly carbonated canned cocktails)
Gently fold the chilled cocktail base into the cold club soda in a ratio that yields 6 oz finished per can: for 4 cans of 12 oz, combine all base with 24 oz soda. Stir slowly once — do not vigorously agitate or you'll lose carbonation.
- 6
Alternative: Force-Carbonate (for higher carbonation)
If you have a keg and CO2: transfer the chilled cocktail base to the keg, top with cold sparkling water or carbonate the mixed product to desired volumes of CO2 (typically 2.2–2.6 vols for a bright canned cocktail). Follow your equipment's safety and sanitation guidelines.
Finishes & Optional
- 7
Add Bitters and Adjust
If using bitters, add approximately 8 drops to the combined, chilled mixture and stir once. Taste and adjust sweetness or acidity as needed in small increments (½ tsp simple syrup or ½ tsp lime juice).
- 8
Garnish Prep
Prepare 4 lime wheels or wedges. If using salt rims, wet the rim of each can/bottle and dip into about 1 tsp sea salt evenly distributed among the cans.
Canning & Packaging (optional)
- 9
Sanitize Cans/Bottles
Ensure containers are sanitized and chilled. If using pressurized can seamers, follow manufacturer protocols. If using crowlers or bottles, keep everything cold to preserve carbonation and reduce foaming.
- 10
Fill and Seal
Carefully fill each 12–16 oz can or bottle, leaving an appropriate headspace (about 0.5–1 inch). Seal per container type: seam cans with a can seamer, cap bottles, or close siphon-dispensed cans. If using non-pressurized filling, pour slowly over ice or a spoon to minimize foam, then chill immediately.
- 11
Final Chill and Label
Refrigerate sealed cans for at least 1 hour before serving to stabilize carbonation. Label with date and contents. Consume within 2–4 weeks for best flavor; if unpasteurized, store refrigerated and consume sooner.
Service
- 12
Serve
Serve chilled over ice if desired, or open can/bottle and pour into a glass with ice. Garnish with a lime wheel or wedge. If salted rim was applied, serve with the rim facing up so the first sips get the salt.
