Make the concentrate
Combine 1 cup water, dried hibiscus, sliced ginger, crushed cardamom pods and crushed juniper berries in a small saucepan. Bring to a gentle simmer over medium heat, then reduce heat and simmer 8 minutes to extract flavor and color.

Remove from heat, cover, and steep 10 minutes. Strain through a fine-mesh sieve or cheesecloth into a heatproof bowl, pressing solids to extract as much liquid as possible. Discard solids.

While still warm, whisk in 2 tablespoons honey until dissolved. Let the concentrate cool to room temperature (about 20–30 minutes). This concentrate will provide the signature floral-spicy note.

Prepare sweetened soda base
In a pitcher, combine 6 cups chilled sparkling water with 3 tablespoons granulated sugar. Stir gently until sugar mostly dissolves (do not stir vigorously to avoid losing carbonation). Add 2 tablespoons fresh lemon juice, 1 teaspoon vanilla extract, 1 teaspoon citric acid and 1 teaspoon orange blossom water. Stir very gently to combine.

Taste the base: it should be mildly sweet and bright. Adjust sweetness by adding up to 1 additional tablespoon sugar or balance acidity with a few more drops of lemon juice, remembering to stir gently.

Finish and blend with concentrate
Measure 3 tablespoons of the cooled flavor concentrate and slowly fold it into the prepared soda base (for a milder flavor). For a stronger profile, use up to 4–5 tablespoons. If using glycerin for mouthfeel, add 1 teaspoon now and gently fold in. Add 1 cup ice to the mixture to chill further, then remove the ice before canning to avoid diluting—strain quickly through a fine sieve if any shards remain.

Give the finished beverage one last gentle stir. Work quickly to preserve carbonation.

Fill and seal cans/bottles
Ensure cans or bottles and lids are sanitized and chilled. Using a funnel, fill each 250 ml can or bottle to about 1 cm (⅜ inch) headspace to allow for safe sealing and slight expansion. Immediately seal with lids or crown caps to trap carbonation.

If you don't have a canning seamer, use screw-top bottles that can be tightened firmly. Make sure caps are fitted while the liquid is cold to retain fizz.

Settle and chill
Place sealed cans/bottles upright in the refrigerator and chill at least 4 hours before serving (overnight preferred). Chilling helps carbonation stabilize and flavors marry.

Before opening, chill the can well. Open carefully to avoid overflow. Serve 1 chilled 250 ml can per person. Garnish with a thin slice of lemon or a small sprig of mint if desired.
