Make and portion the meat
Place the 3 lbs ground beef in a large bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce over the meat. Using your hands or a spatula, gently fold the seasonings into the beef 10–12 times. Do not overwork; mix just until combined.

Portion into 6 patties
Divide the seasoned meat into 6 even portions (about 8 ounces / 227 g each). Lightly shape each portion into a round patty roughly 4 to 4½ inches in diameter and about 3/4 inch thick. Make a shallow indentation in the center of each patty with your thumb to reduce doming while cooking.

Preheat griddle
Heat a flat-top griddle or large heavy skillet over medium-high heat until it registers 375°F (190°C) on an infrared thermometer or until hot and shimmering. Brush the griddle lightly with the neutral oil to create an even cooking surface.

Cook patties
Place the patties on the hot griddle, leaving space between them. Cook undisturbed for 3 to 4 minutes to develop a brown crust. Flip each patty and cook an additional 2 to 4 minutes for medium doneness (adjust time for desired doneness). Internal temperature should reach 160°F (71°C) for well-done per food-safety guidelines. During the last 30–45 seconds of cooking, place one slice of American cheese on each patty; cover with a metal dome or a large bowl if available to help the cheese melt.

Rest patties briefly
Transfer cooked patties to a warm plate and let rest for 2 minutes while you prepare buns and toppings. The short rest helps redistribute juices.

Prepare onions and buns
While the patties cook, heat a small section of the griddle or skillet over medium heat. Add 1 teaspoon oil and spread the thinly sliced onions in a single layer. Cook, stirring occasionally, until softened and lightly caramelized, about 6–8 minutes. Remove onions and keep warm. Split the buns and spread softened butter on cut sides. Toast buttered buns, cut-side down, on the griddle until golden, about 1–2 minutes; remove and keep warm.

Assemble burgers
Place a toasted bun bottom on a clean work surface. Add a lettuce leaf, a slice of tomato (if using), then a cheese-topped patty. Spoon 2 pickle slices and some caramelized onions on the patty. Add ketchup and mustard (about 1 teaspoon each) and mayonnaise if desired. Cap with the bun top. Repeat to make 6 burgers.
