Bring patties to temp

If patties are frozen, thaw in the refrigerator for a few hours or follow package instructions to partially thaw so they cook evenly.

Season patties

Pat patties dry with a paper towel. Lightly brush both sides with vegetable oil and season both sides evenly with salt and black pepper.

Cook patties

Heat a heavy skillet or nonstick pan over medium-high heat until hot. Add a light film of oil. Place patties in the pan and cook 3–4 minutes per side (for fresh) or 4–5 minutes per side (for frozen/denser patties), pressing gently once with a spatula to ensure even contact. Cook until a caramelized crust forms and internal temperature reaches around 165°F/74°C (follow patty manufacturer guidelines). Remove from heat and let rest on a plate for 2 minutes.

Cajun Mayo (plant-based)

In a small bowl combine vegan mayonnaise, lemon juice, Cajun seasoning, smoked paprika, garlic powder, hot sauce (if using), and salt. Whisk until smooth and well combined. Taste and adjust seasoning — add more Cajun seasoning or hot sauce for heat, or a squeeze of lemon for brightness. Refrigerate until ready to assemble (can be made up to 48 hours ahead).

Prepare produce

Wash and dry lettuce leaves. Slice the tomato into 1/4" (6 mm) thick slices. If using pickles, have them ready.

Toast buns

Heat a clean skillet over medium heat. Lightly spread vegan butter or oil on cut sides of buns. Place buns cut-side down in the skillet and toast 30–60 seconds until golden and slightly crisp. Remove from heat.

Assemble the burger

Spread about 1–2 tablespoons of Cajun mayo on the bottom half of each bun. Place 2 lettuce leaves on the bottom bun to act as a moisture barrier, then add the cooked plant-based patty. Top each patty with 1–2 tomato slices and pickles if using. Spoon another 1 tablespoon of Cajun mayo on the top bun and close the burger. Serve immediately.

Serving suggestion

Serve THE BEYOND with fries, sweet potato fries, or a simple green salad. Leftover Cajun mayo keeps up to 48 hours refrigerated.
