Mesquite BBQ Sauce

Mesquite BBQ Sauce

Sweat aromatics

Heat 2 tablespoons olive oil in a medium saucepan over medium heat. Add the finely chopped onion and cook, stirring occasionally, until soft and translucent, about 6–8 minutes. Add the minced garlic and cook 30–45 seconds until fragrant.

Build sauce

Stir in 1 cup ketchup, 1 tablespoon apple cider vinegar, 3 tablespoons brown sugar, 1 tablespoon molasses, and 2 teaspoons Worcestershire sauce. Mix to combine.

Season and thin

Add 1 teaspoon mesquite liquid smoke, 1 teaspoon smoked paprika, 1 teaspoon ground cumin, 1 teaspoon black pepper, and 1.5 teaspoons kosher salt. Pour in 1/2 cup water to loosen the sauce and bring to a gentle simmer.

Simmer and finish

Reduce heat to low and simmer, partially covered, stirring occasionally, until sauce thickens slightly and flavors meld, about 12–15 minutes. Taste and adjust seasoning: add a pinch more salt, a dash of vinegar, or extra liquid smoke if desired. Remove from heat and let cool slightly. If you prefer a very smooth sauce, purée with an immersion blender or in a countertop blender until smooth.

Meat and Rub

Prep meat

Pat the 3 lb brisket flat or chuck roast dry with paper towels. Trim excess fat, leaving a thin fat cap for flavor (about 1/8 inch) if present.

Make rub

In a small bowl combine 2 teaspoons kosher salt, 2 teaspoons coarse black pepper, 1 teaspoon garlic powder, 1 teaspoon onion powder, and 1 tablespoon brown sugar. Mix thoroughly.

Season meat

Rub 1 tablespoon vegetable oil over the surface of the meat to help the rub adhere. Evenly coat the entire roast with the dry rub, pressing it into the surface.

Heat a large heavy skillet or griddle over medium-high heat until smoking slightly. Sear the roast on all sides, about 2–3 minutes per side, until a brown crust forms. This step locks in flavor and helps create a bark.

Cook low and slow

For oven: Preheat oven to 275°F (135°C). Place the seared roast on a rack in a shallow roasting pan. Tent loosely with foil and roast until internal temperature reaches 195–205°F (90–96°C) for brisket-style tenderness, about 3 to 4 hours (time varies by size). For grill/smoker: Set smoker to 225–250°F (107–121°C) using fruit woods and a small amount of mesquite for smoke flavor; place roast on the grate and smoke until internal temperature is 195–205°F, about 4–6 hours. If using a gas/charcoal grill without smoker, set up for indirect cooking and add soaked mesquite wood chips in a smoker box or foil packet placed over coals.

Wrap (Texas crutch, optional)

If the roast stalls and you want to speed finish, wrap it tightly in heavy-duty foil (or butcher paper) after it reaches about 160–165°F, add a splash (2–4 tablespoons) of reserved water or beef broth inside the foil, and return to the oven/grill until 195–205°F.

Rest

When the roast reaches target temperature, remove from heat and let rest, loosely tented with foil, for 30–45 minutes. Resting allows juices to redistribute and the meat to become easier to slice.

Slice or pull

Unwrap and slice the meat thinly against the grain for brisket or shred/pull if using a chuck roast for pulled style. Reserve pan juices and any rendered fat; skim off excess fat and stir some into the Mesquite BBQ sauce if desired to make it glossy.

Finish and Serving

Warm sauce

If desired, reheat 1/2 cup of the prepared Mesquite BBQ sauce in a small saucepan over low heat until warm. This is for finishing and serving.

Assemble

Toast buns or bread lightly. Pile sliced brisket or pulled beef on buns, spoon warm Mesquite BBQ sauce over the meat (about 1–2 tablespoons per sandwich), and top with pickled red onions and chopped cilantro/parsley if using.

Serve

Serve immediately with extra sauce on the side. Leftover meat keeps well refrigerated for 3–4 days and the sauce for up to 2 weeks refrigerated in a sealed container.
