Method
Syrup Base
Make simple syrup
Combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat over medium, stirring occasionally, until the sugar is fully dissolved and the mixture just reaches a gentle simmer. Do not boil vigorously. Once dissolved, reduce heat and simmer for 1 minute, then remove from heat.
Allow the simple syrup to cool slightly (about 5 minutes) before adding citrus components to preserve fresh flavor.
Citrus Flavoring
Extract zest and juice
While the syrup is warm, finely grate the zest of one lemon and one lime (about 1 tablespoon each). Roll both fruits on the countertop firmly with the palm of your hand to release juices, then cut and squeeze to yield about 2 tablespoons each of fresh lemon and lime juice. Strain seeds.
Infuse syrup
Stir the lemon and lime zests into the warm simple syrup, then add the lemon and lime juices. Let the mixture steep for 10–15 minutes off the heat so the citrus oils and juices infuse the syrup.
After steeping, strain the syrup through a fine-mesh sieve or cheesecloth into a clean container to remove zest and any pulp. Press gently on solids to extract flavor, then discard solids.
Aromatic/Adjustments
Adjust tartness
Taste the strained citrus syrup. If you want a brighter, more tart flavor similar to commercial Sprite, stir in up to 1 teaspoon citric acid until dissolved. If the syrup tastes overly sharp, a very small pinch of baking soda (a single pinch, stir and taste) can mellow acidity — add only if necessary and mix thoroughly. Refrigerate the syrup until chilled (at least 30 minutes) or use cool water/ice to bring temperature down quickly.
Carbonation & Serving
Assemble the drink
For each serving (about 1 cup / 240 ml finished): fill a tall glass with ice, add 2 tablespoons (about 30 ml) of the chilled citrus syrup, then gently pour 1 cup (240 ml) cold carbonated water over the syrup. Stir once gently to combine without losing too much fizz.
Garnish with a lemon or lime slice and serve immediately. Store any leftover chilled syrup in a sealed container in the refrigerator for up to 1 week.
