Method
Brew & Sweeten the Southern Tea Base
Make strong brewed tea
Bring 1.5 liters (about 6 cups) of water to a rolling boil. Remove from heat and add 8 black tea bags. Steep for 6–8 minutes for a robust Southern-style tea. Remove and discard tea bags, pressing gently against the side to extract flavor.
Prepare simple syrup
While tea is steeping, combine 1 cup granulated sugar and 1 cup water in a small saucepan. Heat gently, stirring until sugar fully dissolves. Remove from heat and cool slightly. (This yields about 1 cup of simple syrup.)
Sweeten and mix
Stir 3/4 cup freshly squeezed lemon juice into the warm tea. Add the prepared simple syrup to taste; start with the full 1 cup for classic sweetness (adjust later if desired). Add 0.75 liters (about 3 cups) of cold water to dilute the concentrate to about 2 liters total. Chill in refrigerator until cold, at least 1 hour.
Prepare Fruit Flavor Concentrates
Make fruit purées (if using fresh fruit)
For each flavor (mango, peach, strawberry, raspberry): pit/peel/hull fruit as needed and place roughly chopped fruit into a blender. Blend until smooth. If seeds or fibrous bits remain (especially for raspberries), strain through a fine mesh sieve into a bowl, pressing with a spatula to extract about 1 cup of smooth puree per flavor.
Sweeten and adjust
Taste each puree. If it tastes tart or not sweet enough compared to the tea, stir in up to 1/4 cup optional simple syrup into the puree. This yields a concentrated fruit add-in (about 1 cup each) that will mix with the tea without thinning flavor excessively.
Assemble Southern Tea & Lemonades (per serving and batch)
Single glass (standard serving)
Fill a 16- to 20-ounce glass with 1 to 1.5 cups ice (about 1 to 1.5 cups). Add 12 fl oz (about 1.5 cups) of chilled sweetened tea base. Spoon in 2 to 3 tablespoons (approx. 30 to 45 ml) of chosen fruit purée for a lightly flavored lemonade-style tea; use 3 to 4 tablespoons for stronger flavor. Stir vigorously to combine. Garnish with a lemon slice and a sprig of mint.
Pitcher (serves 6–8)
In a 2–3 quart pitcher, add 1.5 liters of chilled tea base. For each flavor you want to include in the pitcher, add 3/4 to 1 cup fruit purée and stir well. Taste and adjust: if too strong, add cold water; if too tart, add up to 2 tablespoons simple syrup. Add ice and lemon slices just before serving to avoid dilution. Serve over ice in individual glasses with mint garnish.
Flavor flight or mixed bar suggestions
Offer small 2–3 ounce pours of each fruit purée on the side so guests can add to their tea to taste. Provide measuring spoons (tablespoon) and extra simple syrup, lemon wedges, and mint so each guest can customize sweetness and acidity.
Storage
Store leftover chilled tea base in an airtight container in the refrigerator up to 3–4 days. Keep fruit purées refrigerated in covered containers up to 48 hours (best used within 24 hours). For longer storage, freeze purees in ice cube trays and thaw as needed.
