Method
Fries
Prep potatoes (if using fresh)
If using fresh russet potatoes, wash and peel if desired. Cut into 1/3–1/2-inch thick sticks. Rinse in cold water until water runs clear to remove excess starch, then dry thoroughly on clean kitchen towels or paper towels.
Fry method
Heat 1.5–2 cups vegetable oil in a heavy pot or deep fryer to 325°F (160°C). Fry potato sticks in batches for 3–4 minutes until cooked through but pale. Remove and drain on a wire rack or paper towels. Increase oil temperature to 375°F (190°C) and fry the batches again for 2–3 minutes until golden and crisp. Drain briefly and season with 1 tsp kosher salt and 1/2 tsp black pepper while hot.
Bake method (alternative)
Preheat oven to 450°F (230°C). Toss dried potato sticks with 2 tbsp oil (from the ingredients oil amount can be used if baking instead) and spread in a single layer on a parchment-lined baking sheet. Bake 20–30 minutes, turning halfway, until golden and crisp. Season with salt and pepper while hot.
Bacon & Cheese Topping
Preheat oven to 400°F (200°C) if not already on from baking fries. Cook bacon in a skillet over medium heat until crisp, about 8–10 minutes, turning occasionally. Transfer to paper towels to drain and cool, then chop into bite-size pieces. Reserve 1 tablespoon bacon fat (optional) to toss with fries for extra flavor.
Combine shredded sharp cheddar and Monterey Jack in a bowl and mix evenly.
Once fries are hot and on an oven-safe platter or sheet, scatter fries evenly, sprinkle chopped bacon over them, then top with the shredded cheese mixture. Place under a broiler or in a 400°F oven for 2–4 minutes until cheese is fully melted and bubbly. Watch closely to avoid burning.
Finishes & Garnish
While cheese melts, stir hot sauce into sour cream if using a lightly spiced sour cream. Place sour cream in a small bowl for dolloping.
When cheese is melted, remove loaded fries from oven. Dollop sour cream over fries or serve on the side. Sprinkle sliced green onions and chopped chives evenly across the top. Finish with a light dusting of smoked paprika if desired for extra smoky flavor.
