Ranch Spread

Make the ranch

In a small bowl, whisk together mayonnaise and buttermilk until smooth. Add chopped chives, parsley, dried dill, garlic powder, onion powder, lemon juice, salt, and black pepper. Taste and adjust seasoning — add a little more buttermilk if you prefer a thinner spread. Refrigerate while you assemble the sandwiches to let flavors meld (at least 10 minutes).

Prep bacon (if not already cooked)

If your bacon is uncooked, preheat oven to 400°F (205°C). Arrange bacon in a single layer on a rimmed baking sheet lined with foil or parchment. Bake 12–18 minutes until crisp to desired doneness. Transfer to paper towels to drain and cool slightly. For stovetop, fry over medium heat 6–10 minutes. Use 8 slices total (2 per sandwich).

Prepare bread

Spread about 1 tablespoon of softened butter on the outside face of each bread slice (4 slices total). On the inside face of two slices, spread a generous 1.5 tablespoons of the prepared ranch each. These will be the interior sides that contact the filling.

Assemble sandwiches

On the ranch-coated inside of each of the two bottom slices, layer 4 slices of Monterey Jack cheese (or enough to cover), then 4 bacon strips, then optional tomato slices and lettuce if using. Top with the remaining bread slice, buttered side out.

Cook sandwiches

Heat a heavy skillet or griddle over medium-low to medium heat. Place the sandwiches buttered-side-down and cook 3–5 minutes until the bread is golden brown and the cheese begins to melt. Press gently with a spatula or a weighted press for even contact. Flip carefully and cook the other side 3–4 minutes until golden and cheese is fully melted. If the bread is browning too quickly before cheese melts, reduce heat and cover the pan for 1–2 minutes to trap heat and finish melting.

Rest and serve

Transfer sandwiches to a cutting board and let rest 1 minute. Slice each sandwich in half diagonally. Serve immediately with extra ranch for dipping if desired.
