Set up dredging stations
Arrange three shallow bowls or wide plates. In bowl 1 combine 1/2 cup flour and 1/4 cup cornstarch; mix and season with a pinch of salt. In bowl 2 whisk together 2 eggs and 3 tbsp milk (or water) until smooth. In bowl 3 combine 1 cup panko, 2 tbsp grated Parmesan (if using), 1 tsp paprika and 1/2 tsp garlic powder; mix well.
Coat the mushrooms
Working in batches to avoid crowding, dredge each mushroom first in the flour mixture, shaking off excess; then dip into the egg wash; finally press into the panko mixture to coat thoroughly. Place coated mushrooms on a wire rack or tray while heating oil. Repeat until all mushrooms are coated.

Heat oil
Pour about 1 cup neutral oil into a heavy skillet (cast iron or stainless) to create a 1/4–1/2-inch layer. Heat over medium-high until oil reaches 350°F (175°C) or a small piece of bread sizzles and turns golden in about 30 seconds. Maintain medium-high heat so temperature stays around 325–350°F while frying.
Fry mushrooms
Carefully add coated mushrooms in a single layer, being careful not to overcrowd the pan (fry in batches). Fry 2–3 minutes per side, turning with tongs, until golden brown and crisp. Smaller mushrooms may take less time. Use a slotted spoon or tongs to transfer fried mushrooms to a paper towel-lined tray to drain.
Finish and season
When the last batch is nearly done, reduce heat to low, add 1 tbsp butter to the skillet and let it melt. Toss the drained fried mushrooms briefly in the butter and the leftover minced garlic and chopped parsley (from prep) over low heat for 20–30 seconds to coat and infuse flavor. Taste and adjust seasoning with a pinch of salt and black pepper if needed. Serve immediately with lemon wedges on the side for squeezing over (optional).
