Beef Patties
Form patties
Divide the ground beef into four equal portions (about 4 oz / 115 g each). Gently form each portion into a round patty about 3½ inches (9 cm) wide and roughly 3/4 inch (2 cm) thick. Do not overwork the meat — handle lightly so patties stay tender. Press a shallow dimple in the center of each patty with your thumb to help them cook flat.
Season
Brush or rub each patty lightly with the neutral oil. Season both sides evenly with the kosher salt and freshly ground black pepper. Sprinkle a little Worcestershire sauce on top of each patty (about 1/4 tsp per patty) or mix into the meat before forming if preferred.
Cook patties
Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 2–3 minutes). Add a thin film of oil to the pan. Place the patties in the pan without crowding (cook in batches if needed). Cook for 3 to 4 minutes on the first side without moving, until a deep brown crust forms. Flip once and cook another 2 to 3 minutes for medium doneness. In the last 30–45 seconds of cooking, place a slice of cheese on each patty and cover the pan briefly (30–45 seconds) to melt the cheese. Remove patties to a warm plate and tent with foil.
Buns & Cheese
Toppings
Slice the tomato into 1/4-inch (6 mm) thick rounds. Slice the red onion into thin rings. Rinse and spin-dry or pat the lettuce leaves. Have the dill pickle slices ready. Assemble toppings so they are within reach for building the burgers.
Assembly & Condiments
Spread mayonnaise on the bottom bun, then add lettuce. Place the cheese-topped beef patty on the lettuce. Add tomato slice, onion rings, and two pickle slices. Spread ketchup and mustard on the top bun (adjust amounts to taste) and place it on the burger. Repeat for remaining burgers.
Serve immediately while hot with fries or your preferred side.
