Method
Prep Vegetables
Wash and dry
Rinse cucumber, lettuce, tomatoes, carrot, green pepper, onion, and mushrooms under cold water. Pat dry with a clean towel or use a salad spinner for the lettuce.
Slice cucumber
Trim ends and cut the cucumber into 1/8–1/4 inch rounds or half-moons if preferred for easier layering (about 12–16 slices).
Prepare lettuce
Core and chop romaine hearts into 1-inch wide ribbons or bite-sized pieces. Place in a bowl and keep chilled until assembly.
Dice tomatoes
Core and cut tomatoes into 1/2-inch dice or into 6–8 wedges per tomato, depending on preferred texture.
Shred carrot
Peel the carrot if desired and julienne or grate into thin strips — about 1/2 cup when done.
Cook Breaded Tenders & Mushrooms
Cook tenders (oven method)
Preheat oven to 400°F (200°C). Arrange frozen plant-based breaded tenders on a baking sheet in a single layer. Cook according to package instructions, typically 12–18 minutes, flipping halfway, until browned and internal temperature is hot and breading is crisp. For extra crispness, finish 1–2 minutes under the broiler—watch closely.
Cook tenders (stovetop method)
Heat 2 tbsp vegetable oil in a large skillet over medium heat. Add frozen or thawed plant-based tenders in a single layer and cook 3–4 minutes per side until golden and heated through. Transfer to a paper towel-lined plate to drain any excess oil.
Sauté mushrooms (optional)
While tenders cook, heat a small skillet over medium-high heat. Add the oiled mushroom slices and sauté 3–4 minutes until they release moisture and brown lightly. Season with a pinch of salt and pepper. Remove from heat and set aside.
Warm & Prepare Tortillas
Build a ranch spread
If ranch needs thinning or brightening, whisk 2 tsp vegan mayo and 1 tsp lemon juice into 1 cup vegan ranch. Season with 1/4 tsp salt and 1/8 tsp black pepper to taste.
Assemble Wraps
Layer base
Place a warmed tortilla on a clean work surface. Spread about 2–3 tbsp of vegan ranch in a line down the center of the tortilla, leaving 1–1.5 inches at each end.
Add lettuce and cucumbers
Top the ranch with 1/2 to 3/4 cup chopped romaine and 3–4 cucumber slices per wrap to create a crisp bed for the tenders.
Place tenders
Arrange 3 breaded plant-based tenders down the center of each tortilla (for four wraps using 12 tenders). If desired, slice tenders in half lengthwise for easier biting and better distribution.
Fold and serve
Fold the bottom of the tortilla up over the filling, then fold in the sides and roll tightly to form a wrap. If needed, secure with parchment or toothpicks and cut in half. Serve immediately while tenders are warm and tortilla is pliable.
Serving & Storage
Serve each wrap whole or halved with extra vegan ranch on the side. Store leftover tenders separately from vegetables in airtight containers in the refrigerator for up to 3 days. Assemble wraps just before eating to keep them from becoming soggy.
