Prep dredging stations

Set three shallow bowls or plates: bowl 1 — all-purpose flour seasoned with 1/2 tsp salt and 1/4 tsp black pepper; bowl 2 — plant-based milk mixed with ground flaxseed (stir and let sit 2 minutes to thicken); bowl 3 — breadcrumbs combined with smoked paprika, garlic powder, onion powder, remaining 1/2 tsp salt and remaining 1/4 tsp black pepper.

Coat tenders

Pat the plant-based tenders dry with paper towel. One at a time: dredge each tender in the flour, shaking off excess; dip into the milk-flax mixture, letting excess drip off; press into the seasoned breadcrumbs until evenly coated. Place coated tenders on a tray and repeat for all pieces.

Cook tenders (pan-fry)

In a large skillet over medium heat, heat 2 tablespoons neutral oil until shimmering. Add breaded tenders in a single layer without crowding (work in batches if needed). Cook 3–4 minutes per side, turning once, until golden-brown and heated through. Add remaining 1 tablespoon oil if needed between batches. Transfer cooked tenders to a wire rack or paper towel-lined plate to drain and keep warm.

Alternative: bake

Preheat oven to 425°F (220°C). Place breaded tenders on a parchment-lined sheet, spray lightly with cooking spray, and bake 12–18 minutes, flipping halfway, until crisp and heated through.

Prepare vegetables while tenders cook: thinly slice or chop cucumber, romaine, tomatoes, carrots, green pepper, red onion, and mushrooms. Combine in a large bowl and toss gently to mix. Season lightly with a pinch of salt and pepper and the optional 1 tsp lemon juice to brighten flavors.

Taste and adjust seasoning: if vegetables taste flat, add a tiny pinch more salt or a few drops lemon juice.

Assemble & Serve

Divide the salad vegetables between 2 plates or bowls (recipe yields 2 servings). Arrange 4 cooked plant-based tenders on top of each salad.

Drizzle about 2 tablespoons (per serving) of vegan ranch over the tenders and salad, or serve ranch on the side for dipping. Garnish with chopped parsley or chives if using.

Serve immediately while tenders are warm so breading stays crisp. Provide extra ranch on the side and salt/pepper to taste.
