Short Rib Grilled Cheese
Preparation Instructions
1. Braise the Short Ribs
In the same pot, add sliced onions and cook until caramelized (about 10-15 minutes). Return the short ribs to the pot and add beef broth. Cover the pot and transfer to the oven. Braise for 3 hours or until the meat is tender and pulls apart easily.
2. Prepare the Grilled Cheese
Once the short ribs are done, remove them from the pot and shred the meat. Mix the shredded meat with horseradish sauce. Heat a skillet over medium heat and melt 1 tablespoon of butter. Spread butter on one side of each slice of sourdough bread.
3. Assemble and Grill
On the non-buttered side of two slices, layer shredded short rib mixture and Gruyere cheese. Top with the other slices of bread, buttered side up. Grill each sandwich for about 3-4 minutes on each side, or until golden brown and the cheese is melted.
4. Serve
Slice the grilled cheese in half and serve hot, optionally with Tavern Fries on the side.
