Prepare the Citrus Slaw

In a large bowl, combine shredded red cabbage, shredded carrot, fresh lime juice, fresh orange juice, and salt. Toss well to combine, cover, and refrigerate for at least 15 minutes to allow flavors to meld.

Blacken the Haddock

Pat the haddock fillets dry with paper towels and rub Cajun seasoning evenly on both sides. Heat oil in a skillet over medium-high heat and add the seasoned haddock. Cook for about 3-4 minutes on each side until the fish is cooked through and has a nice blackened crust. Remove from heat.

Warm the Tortillas

In a separate pan, warm the corn tortillas over medium heat for about 30 seconds on each side until pliable.

Assemble the Tacos

Place a piece of blackened haddock on each tortilla. Top with a generous portion of citrus slaw, pickled red onion, a drizzle of Aji sauce, and garnish with micro cilantro.
