Prepare the Potatoes
Wash and peel the russet potatoes. Cut them into thin strips to create fries.

Soak the Fries
Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C).

Fry the Potatoes
Remove the fries from the water and pat them dry with a paper towel. Carefully add them to the hot oil in batches, frying until golden brown and crispy, about 5-7 minutes per batch.

Drain and Season
Remove the fries from the oil and drain them on paper towels. While still hot, drizzle with truffle oil and sprinkle with grated Parmesan cheese and salt to taste.

Garnish and Serve
Toss the fries gently to coat. Garnish with chopped fresh parsley and serve immediately.
