Mixing the Dough
In a large mixing bowl, combine the all-purpose flour and salt. In a separate bowl, mix the water and sourdough starter until well combined. Gradually add the wet ingredients to the dry ingredients, stirring until a shaggy dough forms.

Kneading the Dough
Turn the dough out onto a floured surface and knead for about 10 minutes, until the dough is smooth and elastic. You can also use the stretch and fold method if preferred.

First Rise
Place the kneaded dough back into the mixing bowl, cover it with a damp cloth, and let it rise at room temperature for 4-6 hours, or until it has doubled in size.

Shaping the Dough
Once risen, gently punch down the dough to release the air. Turn it out onto a floured surface and shape it into a round loaf.

Second Rise
Transfer the shaped dough to a proofing basket or bowl lined with a floured cloth. Cover and let it rise for another 2-3 hours.

Preheating the Oven
About 30 minutes before baking, preheat your oven to 450°F (230°C) with a Dutch oven inside to heat up.

Baking the Bread
Once the oven is hot, carefully remove the Dutch oven, place the dough inside, cover it, and bake for 30 minutes. Then, remove the lid and bake for an additional 15-20 minutes, until the crust is golden brown.

Cooling
Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing.
