Method

Cooking the Salmon

    Sear the Salmon

    Heat olive oil in a skillet over medium-high heat. Season the salmon fillets with salt and black pepper. Place the fillets skin-side down in the skillet and sear for about 4-5 minutes until golden brown. Flip and cook for another 3-4 minutes until cooked through.

Cooking the Asparagus

    Sauté the Asparagus

    While the salmon is cooking, heat olive oil in another skillet over medium heat. Add the asparagus spears, season with salt and black pepper, and sauté for 5-7 minutes until tender and bright green.

Making the Hollandaise Sauce

    Prepare the Hollandaise

    In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in melted unsalted butter until the sauce is thickened. Season with salt and a pinch of cayenne pepper.

Serving

    Plate the Dish

    On a plate, place the sautéed asparagus and top it with the seared salmon. Drizzle the warm hollandaise sauce over the salmon and serve immediately.
