Falafel Preparation

    Soak the Chickpeas

    Place the dried chickpeas in a bowl and cover them with water. Let them soak overnight or for at least 8 hours.

    Prepare the Mixture

    Drain and rinse the soaked chickpeas. In a food processor, combine chickpeas, garlic, onion, parsley, cumin, coriander, salt, and baking powder. Pulse until the mixture is coarse but holds together when formed into a ball.

    Form the Falafel

    Transfer the mixture to a bowl and stir in the flour, adjusting as needed until the mixture holds its shape. Form into small balls or patties.

    Heat the Oil

    In a deep pan or fryer, heat oil over medium heat until hot. Test with a small piece of the falafel mixture; it should sizzle upon contact.

    Fry the Falafel

    Carefully add falafel balls to the hot oil, frying in batches to avoid overcrowding. Fry until golden brown and crispy, about 3-4 minutes per side.

    Drain and Serve

    Remove the falafel from the oil and place them on paper towels to drain excess oil. Serve warm with tahini sauce.
