Method
Cooking the Pork

Prepare the Pork
Cut the pork into small cubes and season with salt, black pepper, and garlic powder.

Heat Oil
Heat the vegetable oil in a deep frying pan over medium-high heat.

Fry Pork
Fry the seasoned pork cubes until golden brown and crispy, about 10-15 minutes. Remove and drain on paper towels.
Making Tostones

Prepare Plantains
Peel the green plantains and cut them into 1-inch thick slices.

Fry Plantains
Fry the plantain slices in hot vegetable oil for about 3-4 minutes until they are lightly golden.

Flatten Plantains
Remove the plantains from the oil and flatten each slice with a plantain press or the bottom of a glass.

Crisp Tostones
Return the flattened plantains to the hot oil and fry until crispy, about 2-3 minutes. Remove and season with salt.
Preparing Pico de Gallo

Mix Pico de Gallo
In a bowl, combine diced tomatoes, onion, cilantro, lime juice, and salt. Mix well and set aside.

Serve the crispy chicarrones with the tostones and pico de gallo on the side.
