Prepare the dough
In a mixing bowl, combine the all-purpose flour, cornstarch, and salt. In a separate bowl, beat the egg and mix it with water. Gradually add the egg mixture to the flour mixture until a smooth dough forms. Cover and let it rest for 30 minutes.

Assemble the tequenos
Divide the dough into small pieces. Roll each piece into a rectangle, and place a mozzarella cheese stick at one end. Roll the dough tightly around the cheese stick, sealing the edges to prevent the cheese from leaking out.

Fry the tequenos
In a deep frying pan, heat vegetable oil over medium heat. Once the oil is hot, carefully place the tequenos in the oil. Fry until golden brown and crispy, about 3-4 minutes. Remove and drain on paper towels.

Serve with guacamole
Serve the tequenos hot with guacamole on the side for dipping.
