Prepare the Vegetables

Start by washing the ripe tomatoes under cold water. Remove the stems and cut them into bite-sized pieces. Peel the red onion and slice it thinly.

Mix the Salad

In a large bowl, combine the chopped tomatoes and sliced red onion. Toss gently to mix.

Whip the Feta

In a small bowl, add the feta cheese, olive oil, lemon juice, salt, and black pepper. Use a hand mixer or a fork to whip the feta until it becomes creamy and smooth.

Add the Almonds

Roughly chop the Marcona almonds and add them to the bowl with the tomatoes and onions. Mix everything together gently.

Assemble the Salad

Drizzle the whipped feta over the salad mixture. Sprinkle with freshly chopped parsley for garnish.

Serve

Serve the tomato and onion salad immediately, or refrigerate for up to 30 minutes to let the flavors meld before serving.
