Prepare the Lobster Tails
Start by thawing the frozen lobster tails if they are frozen. Place them in the refrigerator overnight or run them under cold water for about 30 minutes until thawed.
Boil the Lobster Tails
In a large pot, bring 4 cups of water to a rolling boil. Add 1 teaspoon of salt. Once boiling, carefully place the lobster tails into the pot and cover. Cook for about 8-10 minutes or until the shells turn bright red and the meat is opaque.
Prepare the Ice Bath
While the lobster tails are cooking, prepare an ice bath by filling a large bowl with 4 cups of ice and 4 cups of cold water.
Chill the Lobster
Once the lobster tails are cooked, remove them from the pot and immediately place them in the ice bath. Let them chill for 5-10 minutes to stop the cooking process.
Make the Garlic Butter Sauce
In a small saucepan, melt 4 tablespoons of unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant. Stir in 2 tablespoons of lemon juice, 1 teaspoon of paprika, and season with salt and black pepper to taste. Remove from heat and stir in the chopped parsley.
