    Scramble the Eggs

    In a bowl, crack the 2 eggs and whisk them together with salt and black pepper until well combined.

    Cook the Eggs

    In a non-stick skillet, melt 1 tablespoon of butter over medium heat. Pour the egg mixture into the skillet. Stir gently with a spatula until the eggs are fully cooked but still soft. Remove from heat and set aside.

    Cook the Bacon

    In the same skillet, add the 2 slices of bacon and cook over medium heat until crispy. Flip halfway through cooking. Remove from skillet and place on a paper towel to drain excess fat.

Breakfast Potatoes

    Prepare the Potatoes

    Wash and dice the potato into small cubes. In a skillet, heat 1 tablespoon of olive oil over medium heat.

    Cook the Potatoes

    Add the diced potatoes and cook, stirring occasionally, until golden and tender, about 10-12 minutes. Add 0.5 cup of diced onion, garlic powder, paprika, salt, and black pepper. Stir and cook for another 5 minutes until onions are translucent.

Cornbread

    Mix the Cornbread Ingredients

    In a bowl, combine 1 cup of cornmeal, 0.5 cups of milk, 1 egg, 2 tablespoons of sugar, 1 teaspoon of baking powder, and 0.5 teaspoons of salt. Mix until smooth.

    Bake the Cornbread

    Preheat the oven to 400°F (200°C). Pour the mixture into a greased baking dish and melt 2 tablespoons of butter on top. Bake for about 20-25 minutes or until golden brown. Allow to cool slightly before slicing.
