Prepare the Patties
In a bowl, combine 1 pound of ground beef with 1 tsp salt and 1 tsp black pepper. Mix gently to combine without overworking the meat.

Form and Smash
Divide the mixture into 4 equal portions (about 4 oz each). Shape each portion into a ball and then flatten it into a patty. Ensure the patties are about 1/2 inch thick.

Slice the Onion
Peel the medium yellow onion and slice it into thin rounds.

Build the Wilma
Spread 2 tbs of Dijonaise on the bottom half of each toasted brioche bun. Place two cheese-topped patties on each bun, followed by the grilled onions and 2 slices of dill pickles. Top with the other half of the bun.
