Patties

    Prepare the Patties

    In a large bowl, combine the ground beef, salt, black pepper, garlic powder, and onion powder. Mix until just combined, being careful not to overwork the meat.

    Form the Patties

    Divide the mixture into four equal parts and form each into a flat patty about 4 oz in size. Make a slight indentation in the center of each patty to prevent puffing during cooking.

Bacon and Grilled Onion

    Cook the Bacon

    In a skillet over medium heat, cook the bacon slices until crispy. Remove and place on a paper towel to drain excess fat.

    Sauté the Onion

    In the same skillet, add the olive oil and sliced yellow onion. Sauté for about 5-7 minutes until the onions are soft and caramelized. Remove from heat.

Cooking the Patties

    Grill the Patties

    In the same skillet or on a grill, cook the patties over medium-high heat for about 3-4 minutes on one side. Flip the patties and top each with a slice of pepper jack cheese. Cook for another 3-4 minutes or until the cheese is melted and the patties reach desired doneness.

    Mix the Aioli

    In a small bowl, combine the mayonnaise, Tabasco sauce, and lemon juice. Whisk until well blended. Adjust the Tabasco to taste.

Assembly

    Build the Burger

    Toast the brioche buns if desired. On the bottom half of each bun, place a layer of lettuce, followed by the cooked patty with melted cheese, bacon, sautéed onions, and slices of tomato. Drizzle with the Tabasco aioli and top with the other half of the bun.
