Shrimp Preparation

Season the Shrimp
In a bowl, toss the jumbo Gulf shrimp with Cajun seasoning and olive oil until evenly coated. Set aside to marinate for at least 15 minutes.

Cook the Shrimp
Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Prepare the Onion
Slice the medium onion thinly. Soak the slices in buttermilk for about 10 minutes.

Make the Cajun Cream Sauce
In a small saucepan, combine heavy cream and Cajun seasoning. Heat over medium heat until it begins to simmer. Whisk to combine and reduce slightly, about 5 minutes. Remove from heat.
Assembly

Plate the Dish
To serve, spoon a generous portion of the creamy cheddar grits onto a plate. Top with the blackened shrimp, blistered chiles, and crispy fried onions. Drizzle with the Cajun cream sauce and enjoy!
