Method

Shrimp Preparation

    Season the Shrimp

    In a bowl, toss the jumbo Gulf shrimp with Cajun seasoning and olive oil until evenly coated. Set aside to marinate for at least 15 minutes.

    Cook the Shrimp

    Heat a skillet over medium-high heat. Add the marinated shrimp and cook for about 2-3 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Grits Preparation

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the stone-ground grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally until thickened.

    Add Cheese and Butter

    Once the grits are cooked, stir in the aged sharp white cheddar cheese and butter until melted and creamy. Adjust seasoning if necessary.

Blistered Chiles Preparation

    Blister the Chiles

    In a dry skillet over high heat, add the whole jalapeño or serrano chiles. Cook, turning occasionally, until the skin is blistered and charred. Remove from heat and set aside.

Fried Onion Preparation

    Prepare the Onion

    Slice the medium onion thinly. Soak the slices in buttermilk for about 10 minutes.

    Fry the Onion

    In a separate skillet, heat vegetable oil over medium-high heat. Dredge the soaked onion slices in flour, shaking off excess. Fry the onion rings until golden brown and crispy, about 3-4 minutes. Drain on paper towels.

Cajun Cream Sauce Preparation

    Make the Cajun Cream Sauce

    In a small saucepan, combine heavy cream and Cajun seasoning. Heat over medium heat until it begins to simmer. Whisk to combine and reduce slightly, about 5 minutes. Remove from heat.

Assembly

    To serve, spoon a generous portion of the creamy cheddar grits onto a plate. Top with the blackened shrimp, blistered chiles, and crispy fried onions. Drizzle with the Cajun cream sauce and enjoy!
