    Cook the Cavatappi

    Bring a large pot of salted water to a boil. Add the cavatappi pasta and cook according to package instructions until al dente. Drain and set aside.

    In a large saucepan over medium heat, melt the butter. Once melted, whisk in the all-purpose flour and cook for about 2 minutes until it forms a roux (lightly golden). Gradually add the milk while whisking to prevent lumps. Continue to whisk until the sauce thickens (about 5-7 minutes). Stir in the smoked gouda and cooper sharp cheddar until melted and smooth. Season with salt, black pepper, garlic powder, and onion powder.

    Combine Pasta and Sauce

    In a large mixing bowl, combine the cooked cavatappi pasta with the cheese sauce, ensuring the pasta is well-coated. Fold in the shredded braised short rib.

    Preheat your oven to 350°F (175°C). Pour the pasta mixture into a greased baking dish. Top with cornbread crumble and crispy onions.
