    Prepare the Meat

    In a large pot, combine the pork shoulder, pork liver, and pork fatback. Add water to cover the meats and bring to a boil over medium heat.

    Simmer the Meat

    Reduce the heat to low and simmer for about 2 hours, or until the meats are tender and fully cooked. Skim off any foam that forms on the surface.

    Remove and Shred Meat

    Once cooked, remove the meats from the pot and allow them to cool slightly. Shred the meats into small pieces using two forks.

Mixing

    Combine Ingredients

    In a separate bowl, mix together the cornmeal, all-purpose flour, salt, black pepper, thyme, sage, and paprika.

    Make the Mixture

    Gradually add the cooking liquid from the meat pot to the dry ingredients, stirring continuously until a thick batter forms. Fold in the shredded meats.

    Prepare the Baking Dish

    Grease a loaf pan or a baking dish with cooking spray or butter to prevent sticking.

    Pour the Mixture

    Pour the meat and cornmeal mixture into the prepared loaf pan, smoothing the top with a spatula.

    Preheat the oven to 180°C (350°F) and bake for about 1 hour, or until the scrapple is firm and lightly browned on top.
