Prepare the Steak
Remove the NY Strip Steaks from the refrigerator and let them sit at room temperature for about 30 minutes. This ensures even cooking.

Garlic Butter Mashed Potatoes Preparation

Prepare the Garlic Butter
While the potatoes are cooking, melt the butter in a small saucepan over medium heat. Add minced garlic and sauté until fragrant, about 2 minutes.

Mash the Potatoes
Drain the potatoes and return them to the pot. Add the garlic butter mixture and heavy cream. Mash until smooth, and season with salt and black pepper to taste.
Collard Greens Preparation

Sauté Onions and Garlic
In a large skillet, heat olive oil over medium heat. Add chopped onion and sauté until softened, about 5 minutes. Add minced garlic and sauté for an additional 2 minutes.

Cook the Collard Greens
Add chopped collard greens to the skillet, followed by chicken broth, salt, and red pepper flakes. Stir well, cover, and simmer for 20-25 minutes, until the greens are tender.
