Method
Chicken Preparation
- 1
Marinate the Chicken
In a large bowl, combine the buttermilk and hot sauce. Add the chicken thighs and ensure they are fully submerged. Cover and refrigerate for at least 2 hours, preferably overnight for maximum flavor.
- 2
Prepare the Dredging Mixture
In another bowl, mix together the all-purpose flour, cayenne pepper, paprika, garlic powder, salt, and black pepper.
- 3
Coat the Chicken
Remove the chicken from the buttermilk marinade and let excess buttermilk drip off. Dredge each piece of chicken in the flour mixture, ensuring an even coating. Shake off any excess flour.
- 4
Fry the Chicken
Heat oil in a deep skillet or fryer to 350°F (175°C). Carefully place the coated chicken pieces in the hot oil, cooking for about 6-8 minutes on each side until golden brown and cooked through. Use a meat thermometer to ensure the internal temperature reaches 165°F (74°C). Remove the chicken and let it drain on paper towels.
Sandwich Assembly
- 5
Prepare the Veggies
While the chicken is frying, slice the tomato and wash the lettuce leaves.
- 6
Assemble the Sandwich
Spread a tablespoon of mayonnaise on the bottom half of each brioche bun. Place a fried chicken thigh on top, followed by dill pickle slices, lettuce leaves, and slices of tomato. Top with the other half of the bun.
