Cooking Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add 8 cups of elbow macaroni and cook according to package instructions until al dente. Drain and set aside.

Making Cheese Sauce

    In the same pot, melt 1 cup of unsalted butter over medium heat. Once melted, whisk in 1 cup of all-purpose flour and cook for 1-2 minutes until lightly golden.

    Add Milk

    Gradually whisk in 4 cups of milk, ensuring no lumps remain. Continue to whisk until the mixture thickens, about 5-7 minutes.

    Incorporate Cheese

    Reduce heat to low and stir in 3 cups of shredded cheddar cheese and 1 cup of shredded gouda cheese until fully melted and smooth.

    Season the Sauce

    Add 1 tsp of salt, 1 tsp of black pepper, and 1 tsp of paprika to the cheese sauce, stirring well to combine.

Combining and Serving

    Add the drained macaroni to the cheese sauce, stirring until the pasta is fully coated.

    If desired, mix 1 cup of breadcrumbs with 2 tbs of melted butter and 1 cup of grated parmesan cheese. Spread this mixture over the macaroni and cheese.
