Preparation of Blackened Salmon

    Season the Salmon

    Pat the salmon fillets dry with paper towels. Rub each fillet with olive oil, then season generously with cajun seasoning, salt, and black pepper.

    Cook the Salmon

    Heat a skillet over medium-high heat. Once hot, add the salmon fillets, skin-side down. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and has a blackened crust. Remove from heat and set aside.

Preparation of Mango Scallion Rice

    Cook the Rice

    In a saucepan, combine the jasmine rice and vegetable broth (or water). Bring to a boil over high heat, then reduce heat to low, cover, and simmer for 15-20 minutes or until rice is cooked and liquid is absorbed.

    Mix the Rice

    Once the rice is cooked, fluff it with a fork and stir in the diced mango, chopped scallions, and lime juice. Set aside.

Preparation of Lemon Garlic Sauce

    Make the Sauce

    In a small saucepan, melt the butter over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant. Stir in the lemon juice and chopped parsley, then remove from heat.

Preparation of Grilled Asparagus

    Grill the Asparagus

    Preheat a grill or grill pan over medium heat. Toss the trimmed asparagus with olive oil, salt, and black pepper. Grill for about 5-7 minutes, turning occasionally, until tender and slightly charred. Remove from heat.

Plating

    On each plate, place a serving of mango scallion rice, top with the blackened salmon, drizzle with lemon garlic sauce, and arrange the grilled asparagus on the side. Garnish with slices of tomato.
