    Sauté the Meats

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook for about 5 minutes until browned. Next, add the diced chicken thighs and season with salt and black pepper. Cook until the chicken is no longer pink, about 5-7 minutes.

    Add Vegetables

    Stir in the chopped bell peppers, onion, celery, and minced garlic. Sauté for another 5 minutes until the vegetables are softened.

Cooking

    Combine Ingredients

    Add the diced tomatoes, chicken broth, cajun seasoning, bay leaves, and dried thyme to the pot. Stir well to combine all ingredients.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 20-25 minutes, stirring occasionally.

    Add Shrimp

    After simmering, add the shrimp to the pot. Cook for an additional 5-7 minutes until the shrimp are pink and cooked through.

    Final Seasoning

    Taste and adjust seasoning if necessary, adding more salt or cayenne pepper to taste.

    Serve with Rice

    Remove the bay leaves from the stew. Serve the hearty jambalaya over a bed of cooked long-grain rice, ensuring each bowl gets a good mix of meat, shrimp, and vegetables.
