Cooking the Gumbo

Sauté the Vegetables
In a large pot or Dutch oven, heat a tablespoon of oil over medium heat. Add the diced onion, bell pepper, celery, and minced garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Add Sausage and Chicken
Add the sliced andouille sausage to the pot and cook for another 5 minutes. Stir in the shredded smoked chicken.

Incorporate Spices
Sprinkle in the Cajun seasoning, bay leaves, salt, and black pepper. Stir to combine all ingredients.

Add Liquids
Pour in the chicken broth and add the tomato paste. Stir well to dissolve the tomato paste.

Cook the Gumbo
Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 30 minutes, stirring occasionally.

Add Okra
After 30 minutes, add the okra to the pot and continue to simmer for an additional 15 minutes.
