Preparation of Braised Chicken

    Sear the Chicken

    Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and black pepper. Add the chicken to the skillet and sear for about 4-5 minutes on each side, until golden brown.

    Add Garlic

    Mince the garlic cloves and add them to the skillet with the chicken. Sauté for 1 minute until fragrant.

    Braised Chicken

    Pour 1 cup of chicken broth into the skillet. Cover and reduce the heat to low. Let it simmer for 20-25 minutes until the chicken is cooked through and tender.

    Shred Chicken

    Remove the chicken from the skillet and let it cool slightly. Shred the chicken using two forks and set aside.

Preparation of Salad

    Prepare the Vegetables

    While the chicken is braising, wash and dry the mixed greens. Halve the cherry tomatoes. Slice the cucumber and red onion into thin strips.

    Combine Ingredients

    In a large bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion.

    Mix Dressing Ingredients

    In a small bowl, whisk together 3 tablespoons of olive oil, 2 tablespoons of balsamic vinegar, and 1 teaspoon of honey. Season with salt and black pepper to taste.

Assembly

    Assemble the Salad

    Add the shredded braised chicken to the salad mixture. Drizzle the dressing over the top and toss gently to combine.

    Serve

    Serve the garden salad immediately, garnished with additional black pepper if desired.
