Shrimp Preparation

    Prepare the Shrimp

    In a large bowl, season the peeled and deveined shrimp with salt, black pepper, paprika, and cayenne pepper. Set aside to marinate for about 15 minutes.

    Prepare Breading Stations

    In one shallow dish, place the all-purpose flour. In another shallow dish, beat the eggs and mix with milk. In a third shallow dish, combine the cornmeal with a pinch of salt and pepper.

Frying the Shrimp

    Heat the Oil

    In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Shrimp

    Dredge each marinated shrimp first in the flour, then dip into the egg mixture, and finally coat with the cornmeal mixture, ensuring they are well-coated.

    Fry the Shrimp

    Carefully place the breaded shrimp in the hot oil, cooking in batches to avoid overcrowding. Fry for 2-3 minutes on each side or until golden brown. Remove and drain on paper towels.

Assembling the Po' Boy

    Prepare the Bread

    Slice the French bread or hoagie rolls lengthwise, but do not cut all the way through. Lightly toast them if desired.

    Assemble the Sandwich

    Spread a generous amount of remoulade sauce on the inside of each bread. Fill with shredded lettuce, sliced tomatoes, and top with several pieces of fried shrimp.

    Serve

    Close the sandwich and serve immediately with extra remoulade on the side for dipping.
