Method

Fried Green Tomatoes

  1. 1

    Prepare the Tomatoes

Slice the green tomatoes into 1/2 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out excess moisture.

  2. 2

    Breading Setup

Set up a breading station with one bowl for the buttermilk, one bowl for the flour, and one bowl for the cornmeal mixed with black pepper.

  3. 3

    Coat the Tomatoes

Dip each tomato slice first in the flour, then in the buttermilk, and finally coat with cornmeal, pressing gently to adhere.

  4. 4

    Fry the Tomatoes

In a large skillet, heat oil over medium-high heat. Fry the tomato slices in batches for about 3-4 minutes per side, or until golden brown. Drain on paper towels.

Smashed Avocado

  1. 5

    Prepare the Avocados

Cut the avocados in half, remove the pit, and scoop the flesh into a bowl.

  2. 6

    Mash the Avocados

Add lime juice, salt, and red pepper flakes to the bowl. Use a fork to smash the avocado to your desired consistency.

Hollandaise Sauce

  1. 7

    Melt the Butter

In a small saucepan, melt the butter over low heat. Let it cool slightly.

  2. 8

    Whisk the Egg Yolks

In a bowl, whisk the egg yolks until they are pale and frothy.

  3. 9

    Combine Ingredients

Slowly drizzle in the melted butter while continuously whisking the egg yolks. Add lemon juice, salt, and cayenne pepper to taste, whisking until the sauce thickens.

Breakfast Potatoes

  1. 10

    Prepare the Potatoes

Cube the potatoes into bite-sized pieces.

  2. 11

    Season and Cook

In a bowl, toss the potatoes with olive oil, garlic powder, salt, and black pepper. Spread on a baking sheet and bake at 400°F (200°C) for 25-30 minutes, or until crispy.

English Muffin

  1. 12

    Toast the Muffins

Slice the English muffins in half and toast them in a toaster or on a skillet until golden brown.
