    Prepare the Ingredients

    Dice the onion, bell pepper, and celery. Mince the garlic and dice the tomatoes. Peel and devein the shrimp if not already done.

    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the diced onion, bell pepper, and celery. Sauté for about 5 minutes until the vegetables are softened.

    Add Garlic and Spices

    Stir in the minced garlic, espelette pepper, Cajun seasoning, bay leaves, salt, and black pepper. Cook for another minute until fragrant.

    Incorporate the Tomatoes

    Add the diced tomatoes to the pot and stir well. Let it cook for 5 minutes to allow the tomatoes to break down.

    Add Broth and Protein

    Pour in the chicken broth and bring to a boil. Once boiling, reduce heat and add the shredded smoked chicken, sliced andouille sausage, and gulf shrimp. Simmer for about 10 minutes.

    While the broth simmers, cook the rice in a separate pot according to package instructions.
