Rinse the white fish fillets under cold water and pat them dry with paper towels. Cut each fillet into strips about 1 inch wide. Season both sides of the fish strips with salt and black pepper.

In three separate shallow dishes, set up your breading station. In the first dish, add the all-purpose flour. In the second dish, whisk together the egg and milk until combined. In the third dish, mix the breadcrumbs, paprika, garlic powder, and onion powder.

Take a fish strip and dredge it in the flour, shaking off any excess. Next, dip it into the egg mixture, allowing any excess to drip off. Finally, coat it in the breadcrumb mixture, pressing gently to adhere the breadcrumbs. Repeat this process for all fish strips.

In a large skillet or deep frying pan, heat the vegetable oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small piece of bread into it; if it sizzles, the oil is hot enough.
