Prepare the Duck Breasts
Score the skin of the duck breasts in a crosshatch pattern, being careful not to cut into the meat. Season both sides with salt and black pepper.

Prepare the Vegetables
Peel and dice the sweet potatoes into small cubes. Dice the red bell pepper and red onion. Mince the garlic.

Cook the Hash
In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the sweet potatoes and cook for about 10 minutes, stirring occasionally until they begin to soften. Add the red onion, red bell pepper, and garlic. Season with salt, black pepper, and paprika. Cook for an additional 10-15 minutes until the vegetables are tender and slightly caramelized.

Cook the Rice
In a saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the water is absorbed. Remove from heat and let sit covered for 5 minutes.
