    Make the Dough

    In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt. In another bowl, combine milk, eggs, vanilla extract, and melted butter. Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix; the dough should be slightly sticky.

    Chill the Dough

    Cover the bowl with plastic wrap and refrigerate the dough for at least 30 minutes. This will make it easier to handle when forming the beignets.

Cooking

    Heat the Oil

    In a deep fryer or large heavy pot, heat the vegetable oil to 350°F (175°C). Use a thermometer to ensure the oil is at the correct temperature for frying.

    Shape the Beignets

    On a lightly floured surface, roll out the chilled dough to about 1/4 inch thick. Cut into squares or rectangles, about 2 inches in size.

    Fry the Beignets

    Carefully drop the cut dough into the hot oil, a few at a time. Fry for about 2-3 minutes on each side or until they are golden brown and puffed. Use a slotted spoon to remove them from the oil and drain on paper towels.

    While the beignets are still warm, dust generously with powdered sugar. Serve immediately for the best taste.
