Cooking Andouille Sausage

    Cook Sausage

    In a skillet over medium heat, add the Andouille sausage links. Cook for about 5-7 minutes on each side until browned and cooked through. Remove from the skillet and let rest.

Preparing Arugula

    Wilt Arugula

    In the same skillet, add 1 tablespoon of olive oil and minced garlic. Sauté for about 30 seconds until fragrant. Add the arugula, salt, and black pepper. Cook for 1-2 minutes until the arugula is wilted. Remove from heat.

Toasting English Muffins

    Toast Muffins

    Slice the English muffins in half and toast them until golden brown. You can use a toaster or place them under the broiler for a couple of minutes.

Cooking Breakfast Potatoes

    Prepare Potatoes

    Peel and dice the potatoes into small cubes. In a separate skillet, heat 2 tablespoons of olive oil over medium heat.

    Add the diced potatoes to the skillet and season with paprika, garlic powder, salt, and black pepper. Cook for about 15-20 minutes, stirring occasionally, until the potatoes are golden and crispy.

Assembling the Dish

    On each toasted English muffin half, place a portion of the wilted arugula, followed by the sliced Andouille sausage. Serve alongside the crispy breakfast potatoes.
