Prepare the Filling
In a skillet, heat a tablespoon of olive oil over medium heat. Add the minced garlic and sauté until fragrant. Add the wild mushrooms and cook until softened and all moisture has evaporated. Remove from heat and let cool. Once cooled, mix the mushrooms with ricotta, Parmesan, parsley, salt, and pepper in a bowl.

In a large bowl, mix 2 cups of all-purpose flour with 3 large eggs and a pinch of salt. Knead until smooth, then wrap in plastic wrap and let it rest for 30 minutes.

Divide the dough into four pieces. Roll out each piece on a floured surface until very thin, about 1/16 inch thick.
