    Prepare the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to make fries.

    Soak the Fries

    Place the cut fries in a bowl of cold water and let them soak for at least 30 minutes to remove excess starch.

    Preheat the Oil

    In a heavy-bottomed pot or deep fryer, heat vegetable oil to 350°F (175°C).

    Fry the Potatoes

    Drain and pat the fries dry with paper towels. Carefully add the fries to the hot oil in batches, frying until golden brown and crispy, about 4-5 minutes per batch.

    Prepare the Garlic and Rosemary

    While the fries are frying, finely chop the garlic and rosemary.

    Toss the Fries

    Once the fries are done, remove them from the oil and drain on paper towels. Immediately toss the hot fries with the garlic, rosemary, grated Parmesan, and white truffle oil. Season with salt to taste.

    Serve the truffle fries hot as a delicious side dish or appetizer.
