    Prepare the Shallots

    In a small skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced shallots and sauté until golden brown and crispy. Remove from heat and set aside.

    Sauté Vegetables

    In the same skillet, add another tablespoon of olive oil. Add the sliced onion and bell pepper. Sauté until they are soft and slightly caramelized, about 5-7 minutes. Season with salt and black pepper. Remove from pan and set aside.

    Cook the Filet Tips

    In the same skillet, increase the heat to high and add the filet mignon tips. Sear them for about 3-4 minutes, or until they are browned but still medium-rare inside. Season with salt and black pepper.

    Combine Ingredients

    Reduce the heat to low and add the sautéed vegetables to the skillet with the filet tips. Mix well and sprinkle the smoked cheddar cheese over the top. Cover the skillet with a lid to melt the cheese, about 2 minutes.

    Prepare the Baguette

    While the cheese is melting, slice the French baguette lengthwise and optionally dust the inside with all-purpose flour. Toast it lightly if desired.

    Assemble the Cheesesteak

    Once the cheese is melted, spoon the filet and vegetable mixture into the toasted baguette. Top with crispy fried shallots.

    Serve

    Slice the cheesesteak into portions and serve immediately.
