    Prepare the Halibut

    Season the halibut fillets with salt and black pepper on both sides.

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the halibut fillets and sear for 3-4 minutes on each side or until golden brown and cooked through. Remove from skillet and keep warm.

    In the same skillet, reduce heat to medium and add the minced shallots. Sauté until translucent, about 2 minutes. Pour in the white wine and let it simmer until reduced by half.

    Reduce heat to low, and whisk in the butter one tablespoon at a time until fully incorporated. Stir in chopped dill and lemon juice, adjusting seasoning with salt to taste.
