Preparation Steps

  1. 1

    Cook the Onions and Mushrooms

In a skillet, heat olive oil over medium heat. Add sliced onions and cook until caramelized, about 10-15 minutes. Add mushrooms and cook for another 5 minutes. Season with salt and pepper.

  2. 2

    Prepare the Prime Rib

If using leftover prime rib, slice it thinly. If cooking new prime rib, season with salt and pepper, and roast in the oven at 350°F (175°C) until it reaches your desired doneness. Let it rest before slicing.

  3. 3

    Prepare the Au Jus

In a saucepan, heat beef broth over medium heat. Allow it to simmer for about 10 minutes to concentrate the flavors.

  4. 4

    Assemble the Melt

Slice the French baguette in half and toast it if desired. Layer the bottom half with sliced prime rib, then add the caramelized onions and mushrooms. Place provolone cheese on top.

  5. 5

    Melt the Cheese

Place the assembled sandwich under a broiler for 2-3 minutes or until the cheese is melted and bubbly.

  6. 6

    Serve

Cut the sandwich into portions and serve hot with a side of au jus for dipping.
